This thing called Gluten
I just finished my Three Day Coconut Feast(which I will post very soon and am thinking about extending it for a few days!), and what can I say, my body feels really light and I am more focused and clear on things that I do..
You might wonder why I've decided to do such. Aside from giving my body a time to rest by drinking coconut water and eating its meat for three days, (though I must admit I had my teeny tiny cheats! hahahaha!) I have also been experiencing bouts of bloating and gas ( I love you still my tummyyy!), and have went to a series of tests, a full abdomen ultrasound, and even an ultrasound that let me take a peek in a few of my digestive organs...
I was very, very enlightened with what I discovered, though I believe it's only a start of my journey to heal my gut..The doctor said that anatomically, there wasn't any problem with my GI tract, it's more of a "functional" problem, she said and I might have to do some dietary adjustments to determine whether it's true in my case..A few years back, I have already been aware of this whole Vegan, Vegetarian and Gluten Free things(out of my curiousity with food) and I've also encountered people who also told me that these are not real and it's all in a person's mind.
The mere thought of not being able to eat bread( especially Spanish bread, which happens to be my favoriiite!) and other stuff that I got used to eating(which happens to contain gluten), scared me a bit. But as I've been reading into people who have happily and successfully lived their lives, saying goodbye to gluten, advised that we must learn to accept our new lifestyle and look at it on a positive note. :)
We just have to actually PUT IN THE EFFORT of preparing our own meals, taking that time on our weekends to cultivate Self Love by preparing food which nourish our bodies and learning how to be FIRM, speak One's Truth and Learn to Say NO, not succumbing to peer pressures or people who choose not to understand..
If you have been following my blog, you may know that I have worked in different kitchens for a year and have learned from really good chefs and fellow friends in the kitchen..I've learned techniques in cooking and baking, but most importantly, I have learned how to use ingredients that are readily available..be creative and have fun doing it.
This may sound cliche', but I believe that Everything Happens for A Reason. I believe He had given me this in order to share such Love for Good, Nourishing Food...And there's that Extra Challenge! Gluten Free!!! Hahahaha!! Well, I mean, A start from something is a good start. :D
Now, if you may excuse me, as I will be heading to Healthy Options and buy some Gluten Free Flours so I could make my own cookies and brownies and cakes over the weekend! ;)
The Pastry Princess is always a huge part of me, so even if I go gluten free, I will never ever sacrifice my love for pastry. ;)
