Pastry Musings Part 1: Where It All Began
Chocolate chips..butter..oh the aroma of the first freshly baked cookies that I ever baked. How could I ever forget? Having my hands sticky with the dough, messing with the flour and nibbling on chocolate chips..these are my first, beautiful memories with baking..My mom used to buy huge packs of everything, baking soda, baking powder, flour, confectioner's sugar..all those stuff that a newb like me back then would use to make simple chocolate chip cookies.
And looking back, it's just amaziing...amazing in so many ways.
Amazing how I seriously pursued working in kitchens cause I wanted to be the best ever pastry chef, ( Check out a few posts about my first stint as a Pastry Cook at Stockton Place here. ) how i even got to work the line as well, frying onion rings, fries, chicharones (I KNOW RIIIGHT? winks! ), plating salads and appetizers, and even in the sautee station making pastas, healthy whole grain bowls, seafood dishes) and what not.
I mean, I wouldn't have learned how to cook, especially from Chefs whom I really really look up to right now, if not for the passion that i have for pastry. Which is why I'm sharing this with you right now :)
Definitely the prettiest chocolate chip cookie right there! Hah!
I remember getting a recipe from Food Network which says, Big Fat Chewy Chocolate Chip Cookies and following it religiously and didn't even have an idea of a proper ratio. They turned out big and fat, not chewy though and too sweeeeet! I mean, 2 cups sugar and a cup of flour..oh myy thinking about it now, that's like Sugar Suicide! Hahaha!
Okay, this next one may leave you like, oh my gooosh, are you really serious you want to be a Pastry Chef and you even called yourself a Pastry Princess..
I'm allowing this picture and your judgement to be. ( Gosh, I can't stop laughing, seriously. I just can't).
I want you to close your eyes, breathe..

A Whole Wheat Carrot Cake made with Coconut Sugar and Honey Cream Cheese Frosting for a beautiful customer a few years back..
Again, there is hope guys. Just keep going.

This is just a teeny tiny glimpse of how it all began..cause for some reason, I find fulfillment in creating something from scratch with my bare hands..it gives me that sense of happiness..that sense of independence that I could create something nourishing and beautiful with anything that I have..
So many things have changed since then..my food preferences have changed so much as well and the pastries and desserts that I want to make had definitely veered off a quite different, yet more fulfilling path. And I'm so excited to share these with you guys.
