The Best Oatmeal Porridge EVER. And why YOU should CREATE yours now. ;)
I used be really chubby when I was a kid.
And when I say
chubby, I really mean C-H-U-B-B-Y.
Well,
the cute kind of chubby though. ;) Just like my little sister who's apparently not so little anymore. ;)
Fried chicken, French fries, sundaes and
burgers every single day, a cup serving of rice for every meal, and Cadbury
chocolates for evening dessert and midnight snack...you could tell that I
really love to eat.
Yet, one
night I saw papa eating this arroz
caldo like thing in a bowl and I tried it. I didn’t like it at all. It was just
too bland for me, though I like that it was warm..but with such types of food
that I used to eat on a daily basis, a regularly cooked oatmeal back then for
me, was something that I could never, ever include in my Top Food To Eat List.
Not even at the bottom list.
I really didn’t like it.
You could tell.
Another
encounter that I had with such staple food was with my aunt who just went home
from Chicago, I was in highschool back then. Commenting about my weight, she
told me that oatmeal would be a nice dinner – something light, something that
would help me shed some pounds.
Hah! I wasn’t too conscious nor aware of my chubbiness back then. But it’s from her,
that I first learned that oatmeal, apart from it being an instrument to my weight loss journey, is actually a good
fiber source – which I’ve only appreciated in my I’m entering the adult phase of life.(OH NO!) Haha!

I even used to mix
heaping teaspoons of Nutella and Cookie butter in my oatmeal. Just the thought
of eating it..
DROOLS.
well it makes me happy and cringe at the same time. Happy cause
it’s all full of sugar, which gives that “feel good” feeling..and cringe,
because now, I’ve started to become more aware of the things that I put into my
body..cringe, because I know how much sugar and processed ingredients are in
those stuff. Not that I’m against a certain product, cause I still enjoy them
in moderation..but given the choice, I would always love to have my oatmeal
cooked like this.
And that’s something that I want to share with you.
A
healthy, hearty and satisfying oatmeal
porridge recipe, that sure will warm
your
heart, and tummy. ;)
The Best Oatmeal Porridge Recipe EVER

1
cup of rolled/ steel cut oats
·
½
- ¾ cup of water(optional, if you want your oatmeal to be “lighter”)
·
¾
- 1 cup of fresh coconut milk
·
2
tbsp coconut sugar( you can use muscovado/ coconut nectar)
·
A
pinch of cinnamon and nutmeg
·
Handful
of raisins/prunes and cashew nuts
·
1
tbsp of almond/peanut butter(whichever is available to you)
·
1
tsp ground flax seeds
- Prepare all your ingredients first, setting aside the raisins, nuts, nut butter and flax seeds on a separate space while soaking the oats for 30 minutes – 1 hour before cooking.
- Mix your water and coconut milk in a small pot and bring to a boil.
- Drain the soaked oatmeal and pour into the boiling mixture along with the sweetener of your choice. Mix until the sugar melts with the mixture then cover for around 10-15 minutes, continuously checking as it usually may stick at the bottom. (So you better watch out for that porridge! ;) )
- When it has reached that thick, milky consistency, immediately transfer it to your bowl, sprinkling with cinnamon, nutmeg, raisins and nuts.
- Place a dollop of the nut butter and for the last touch to boost up your immunity and digestion, sprinkle some flax power.

You could definitely add some more coconut milk( oh yes I do
that every single time, but make sure you don’t overdo it! Haha! ), change up the
nuts and seeds to whichever suit your taste.. Have fun with it. J It’s YOUR BEST OATMEAL PORRIDGE
