And can I just share that I have such a passionate, intimate affair with dumplings.
For some reason, I feel such a sense of comfort whenever I eat them, be it Hakaw Shrimp Dumplings, those baby Xia Long Baos from Lugang Cafe' and ofcourse, my current favorite: Veggie Dumplings!!!

They're the BEST thing EVER and I am serious when I say that I could eat them, EVERY. SINGLE. DAY.
Good thing I haven't turned out to be a Veggie Dumpling, hopefully not cause I am experimenting on different vegetable mixes and seasonings to play up my palette and I would really love to hear from you just in case you made one before and have used a variety of spices that you would want to share. :)
For the meantime, here's an Original Earth Princess' Veggie Dumpling recipe, and I hope that you take the time to nourish yourself with these babies by preparing them ahead of time for your working lunch or dinner. :)
Makes about 25- 30 yummy pcs
Ingredients:

Small Molo Wrapper Sheets
·
Carrots ( 2 pcs ), finely grated
·
Onions, thinly sliced
·
Pea Sprouts, around 2 cups (toge), chopped
·
Kangkong/ Spinach 1 cup, chopped
Seasoning:
·
2 tsp pepper
·
1 tsp salt
·
1 tsp turmeric
·
½ tsp cayenne
·
Juice of ½ of lemon
· 2 tbsp Tamari sauce
Procedure:

- Place all the prepared vegetables in a mixing bowl, season with the prepared mixture and drizzle with olive oil.
- Let it stand for a few minutes after mixing so the flavor gets blended through.
- Using a small spoon, wrap the veggies on each molo wrapper, sealing with a pinch of water or olive oil.
- Place the veggie dumplings in an airtight container, dusting it with flour before putting the next batch on top of the other, or you can separate them using a plastic wrap.
- Store in the freezer for up to two weeks.
- Steam, Boil or Fry as needed. These are best served with soups or a side of veggies and fish.
