In Pursuit of my Pastry Dreams: A 340 Day Pastry Project Challenge




Do you have that one thing, may that be a hobby or something you do when you’re super bored, that you’re seriously, seriously crazy about that you don’t mind doing it for the rest of your life? J

Given that it’s the first month of the year, I’ve been reading about blogs encouraging people to plunge in, take that leap of faith and not be afraid to take risks in life this year..




Shouldn’t that be the case all the time, though?

Well, of course we still have to act as rational as possible as well and not use such principle to waste our lives. But we should always, always listen to that inner voice in us – that gut instinct(and yes, sometimes those little butterflies in our stomach as well), that knows exactly what we need.

Let me be clear that all these musings are based from things that worked for me in the past and ofcourse, still works for me now cause I must admit that I still have to experience life’s miracles ahead. J



So maybe you’re saying,

340 Day Pastry Project Challenge




that I’ve set for myself this amazing year of 2014.





First, you may be wondering, why 340? 

Why not 365 to complete it to a year?



I finished my stage (it’s a term that they use for kitchen apprentices, so I’m a Pastry Stage I guess. Lol) at Shine Bakery on the first week of January (and that’s something that I have been planning to write about and I guess I'm pretty much too lazy to do so now. But I definitely will sometime in the near future cause it was my first official training in the Pastry Kitchen and I swear I learned tons of things even in such a brief amount of time.)


I’ve met a lot of passionate and inspiring people who have led me to PUSH myself to the limits and gave me opportunities I never thought possible – which leads me to wanting to commit in not only pursuing this field,but also being the best that I can be while learning and mastering the craft. :D

Thus, the 340 Day – Pastry Project Challenge was sweetly born to life. J

The goal of this project is to be able to share snippets from the wonderful world of Pastry and the little adventures that I go through as I pursue my dreams of becoming a pastry chef,  work and learn from different parts of the world specifically in Paris, and oh, have my own Patisserie someday as well! <3

The latter part may not happen yet but I know one day it will so ya’ll better watch out! ;) Katy Perry sang it best...

Though I’ll definitely be sharing how I got here and lessons that I learn every single day of this journey with you guys – whether be it through a new dessert dish that I learned how to plate, through the mistakes that I make in the kitchen, techniques that I get from my mentors, and even baking musings from my own humble kitchen here in the condo.

I am committing myself to learning something new everyday and sharing it with you here and hopefully by the end of the 340 Day Pastry Project Challenge, I would have shared relevant things, techniques and realizations that you might get something from.  

I certainly don’t know what lies ahead from here on up to that point, but one thing I know for sure is, I can build it. I can, and I will make my dreams and vision happen. :D

And hey, whatever that is that you've been putting on hold, 

GET YOUR FREAKING BUTT UP AND WORK IT! <3

Haha. Kidding.
