Balance is Key: Day 8 of 340 Pastry Project
If you have been following my posts from the past few days,
you’re pretty much aware that I’m also doing some stuff in the Garde Manger
Station aside from the “Pastry stuff”. J
And I realized that it’s actually a pretty challenging thing to do despite the fact
that I make my own salad at home cause there are seriously so many things to
consider to do it right.
I swear guys, haha this is the day when I did the following mistakes(and oh yes I’m proud of them!)
haha!
but MANY SALADS.
2. I put WAY TOO MUCH GREENS. Haha. That the guest asked us
to split it into two. Haha.
Talk about starting the year way too generously.

Well, I know there were a lot guys and they’re just too many
to mention. And one thing I’ll always remember was what Chef Celine told me
that day, “Balance is key.”
Indeed it is.
I strongly believe that such message extends way beyond
things that concern the kitchen - with plating desserts and salads, playing
with colors, textures, and ofcourse taste, to the simplest and most complex
things that govern our thoughts, words and actions in life.
In whatever it is that we think, do, dream and accomplish,
let’s always strive for balance. And one thing I’ve learned in my almost
twenty one years of existence, balance only comes when one has achieved inner
peace and harmony between his body, mind and soul.
So, there goes another day for you guys! Hope you’re
learning something! :D
