Brighter Skies with Sunday Pies!



What do you do whenever you're faced with "challenges" in life...when you seem to be indecisive and unsure of things? 

Or simply put, when life gives you a few lemons?

*laughs

For sure you've got something that calms you, that takes you away from this beautiful mess called life - even for just a few seconds, minutes..or even hours....May that be a morning stroll in the park, gorging an entire gallon of Ben & Jerry's ice cream( just like Hillary Duff in the Beauty and the Briefcase movie ) 

- but PLEAAASE, for the love of a healthy life, a few spoonfuls would do! ;)

painting your bedroom wall, writing in your journal....or whatever that is...

I guess, sometimes, it's just really good(and extremely beneficial) to veer off from our daily routines. Others may call it a sweet escape(well in my case, IT REALLY IS SWEEEET and I guess you already know why), a breather..whatever you may call it, I can feel you right now.






Just do it! HAHAHAH!

Well, in my case, being the aspiring pastry chef that I am, it's being in the kitchen with my oven, rolling pie doughs, pressing them into pans, mixing and playing with the cookie batter, enjoying the heat coming from AN OVERLY preheated oven...

Chopping blocks of dark chocolate to mix with some homemade granola, melting butter with chocolate......

OH BUTTER. it just solves LITERALLY everything.

And who doesn't love to play around with marshmallows, sprinkles and chocolate chiips?

Even munching on walnuts that are supposed to be in my super healthy carrot cake batter.

Oh and don't forget the raisins and the coconut flakes! HAHAH. 

YES.

I know.

It's surprising. 

I've never loved a coconut cupcake before ( may that be from Sprinkles or from Georgetown or Crumbs), but ever since I've decided to bake healthier cakes & pastries, I find myself sprinkling unsweetened coconut flakes ALL OVER. :D 

And I find myself day dreaming again in our little kitchen. 

So I might as well share what we've baked last Sunday in our humble home in the province then. 

It was all so random. 

I was confused, and happy at the same time. 

And I badly wanted some PIES.

And I had CLEAR, ALMOST LASER LIKE VISION...LOL

on what pie I would like to recreate...

OH YES.

 the creamyy goeeeyyy caramel....

hints of chocolate and bananas...

the whipped cream(MAH FAVORIIITE!)

It's just death. 

A sweet, delicious, decadent death, I may say.

So it's a good thing that we still had dates and honey on stock as I would really like to reinvent traditional sinful desserts as something that we could enjoy - minus the guilty pleasure that is! :)

 Call us crazy but I guess we really were last Sunday cause we made four different types of pies.

INTRODUCING...

A Super healthy....

YOGURT CHEESECAKE PIE! <3

Well, it's actually just made of yogurt goodness(NO CREAM CHEESE AT ALL IN THIS PIIIIE), included few pieces of lime juice in here for that tangy flavor kick, and there you go! 

A CHEESECAKE-LIKE pie that has only almost half of the calories than that of a traditional one! :D

Oh and by the way, we made a super healthyyy pie crust too and we'd like to call it our special

Nutty Almond Granola Crust

which is basically made of whole wheat flour, almond meal, granola(DUH!), a little bit of honey, a few sprinkles of cinnamon...combined with some heartfelt baking drama. HAHA.
Gotta scratch that last part cause we're moving on to our next PIE :)


These two are our healthy version of a  Banoffee Pie and a Chocolate Fudge Pie,

DATES guys. DATES.

They have just that tad amount of sweetness that can pretty much take over that sinful caramel goodness. :) Plus, it's full packed with fiber. 

Yes to healthy bakiiing!!! :DDD

We also baked some chocolate marshmallow fudge pie using SILKEN TOFU(as you can see above) and some Mini Mango Cheesecake Pie Tarts(not included in photo).

HAHAHA. you might think..

TOFU in a PIE? 

Well, if you actually start to look around, read and research stuff, a lot of people, creative, genius people,  from all over the world(and I'm not exaggerating) are doing their best to recreate dishes, desserts & cakes using ingredients you wouldn't thought possible to work with. And using tofu in puddings & pies is quite pretty normal actually. :D

I wish I could send each and everyone of you samples of these cause you might ask,

 Were we able to bake delicious pies given the ingredient alternatives that we use? :D

Oh you BET. :D The Banoffee Pie was the ULTIMATE BEST SELLER BY THE WAY! 

First batch was gorged down in just a few seconds! ;)

Still, just like a luscious dark chocolate ganache frosting that needs to be boiled & simmered for hours to achieve that silky, almost glassy texture...it's going to take lots of practice, time & a few changes here and there to finally say, 

OH MYY PIEEE!!! 

Haha. Oh well, I just made that expression up. ;)
