Mastery before Speed: Day 6 of Pastry Project Challenge

You may not be aware but aside from Pastry, they also train me at the Garde Manger station which includes making salads and starters as well. :) I personally love eating my greens and it's such a joy to prepare and plate Stockton's salad selection - each having different components of their own. There's a Foie Gras Salad, a Pear Rocket and a Steak Salad (I'm giving you guys a heads up just in case you decide to eat there, okay?)

Of course, I wanted to do my very best in plating it that sometimes I tend to prioritize my speed over the components and presentation itself - which is a huge NO NO in the kitchen. 

This day I've learned that with PROPER practice comes skillful MASTERY. 

Speed is something that one shouldn't aim for at first cause it's going to come naturally once one achieved. 

This actually reminds me of what my favorite yoga teacher used to tell us, 

"I don't care whether your feel lifts up one inch or five inches of the floor, what matters most is you're doing it right - with proper form."

That's why I'm focusing on doing things right first rather than being doing it fast. 

Life, is never a race at all. 

We go our own pace. 


And I swear, I'm patiently(&sweetly) looking forward to that day where I can finally work with both. ;)
